For the Shrimp:
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
For the Honey Sriracha Sauce:
- ¼ cup honey
- 2 tbsp sriracha
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
For Serving:
- 2 cups cooked jasmine rice (or brown rice)
- ½ cup chopped green onions
- 1 tbsp sesame seeds
- ½ cup shredded carrots (optional)
- ½ cup sliced cucumbers (optional)
Instructions

Prepare the Shrimp:
- Pat the shrimp dry with a paper towel. Season with salt, black pepper, and smoked paprika.

Cook the Shrimp:
- Heat olive oil in a large skillet over medium-high heat.
- Add the shrimp and cook for 1-2 minutes per side until pink and opaque. Remove from the skillet and set aside.

Make the Sauce:
- In the same skillet, add honey, sriracha, soy sauce, rice vinegar, garlic, and ginger. Stir well and bring to a simmer.
- Add the cornstarch slurry and stir until the sauce thickens (about 1-2 minutes).

Coat the Shrimp:
- Return the cooked shrimp to the skillet and toss in the sauce until well coated.

Assemble the Bowl:
- Divide cooked rice into bowls.
- Top with honey sriracha shrimp, green onions, sesame seeds, carrots, and cucumbers.
