For the Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil

  • ½ tsp black pepper
  • ½ tsp smoked paprika

For the Honey Sriracha Sauce:

  • ¼ cup honey
  • 2 tbsp sriracha
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)

For Serving:

  • 2 cups cooked jasmine rice (or brown rice)
  • ½ cup chopped green onions
  • 1 tbsp sesame seeds
  • ½ cup shredded carrots (optional)
  • ½ cup sliced cucumbers (optional)

Instructions

  • Prepare the Shrimp:

    • Pat the shrimp dry with a paper towel. Season with salt, black pepper, and smoked paprika.
  • Cook the Shrimp:

    • Heat olive oil in a large skillet over medium-high heat.
    • Add the shrimp and cook for 1-2 minutes per side until pink and opaque. Remove from the skillet and set aside.
  • Make the Sauce:

    • In the same skillet, add honey, sriracha, soy sauce, rice vinegar, garlic, and ginger. Stir well and bring to a simmer.
    • Add the cornstarch slurry and stir until the sauce thickens (about 1-2 minutes).
  • Coat the Shrimp:

    • Return the cooked shrimp to the skillet and toss in the sauce until well coated.
  • Assemble the Bowl:

    • Divide cooked rice into bowls.
    • Top with honey sriracha shrimp, green onions, sesame seeds, carrots, and cucumbers.
  • Serve & Enjoy:
