  • 1 lb (450g) large shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup dry white wine (or chicken broth as a substitute)
  • 1 lemon, juiced (about 3 tbsp)
  • ¼ tsp red chili flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • 8 oz (225g) linguine or spaghetti, cooked and drained
  • ¼ cup reserved pasta water (optional)

Instructions

  • Prepare the Shrimp:
    Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
  • Cook the Shrimp:
    Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2 minutes per side, or until pink and opaque. Remove the shrimp and set aside.
  • Make the Sauce:
    Lower the heat to medium. Add the remaining olive oil and butter to the skillet. Stir in the minced garlic and chili flakes (if using). Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  • Deglaze the Pan:
    Add the white wine (or chicken broth) and simmer for 2-3 minutes, scraping up any browned bits from the pan. Stir in the lemon juice.
  • Combine Shrimp and Sauce:
    Return the shrimp to the skillet. Toss gently to coat them in the sauce. Add the cooked pasta to the skillet and toss until everything is well combined. If needed, add reserved pasta water to adjust the consistency of the sauce.
  • Finish and Garnish:
    Remove from heat. Sprinkle with fresh parsley and serve immediately with lemon wedges on the side.

Notes

  • Substitute white wine with chicken or vegetable broth for a non-alcoholic version.
  • Use whole wheat pasta or zucchini noodles for a healthier twist.
  • To add a kick of heat, adjust the amount of chili flakes or include a dash of hot sauce.
