- 2 boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 4 strips bacon, chopped
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 cup fresh spinach
- 1 tablespoon olive oil
- 1 teaspoon red pepper flakes (optional)
- Fresh basil or parsley for garnish
Instructions
- Prepare the Chicken – Pat chicken breasts dry with paper towels and season with salt, pepper, and Italian seasoning.
- Cook the Bacon – In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving about 1 tablespoon of bacon fat in the pan.
- Sear the Chicken – Add olive oil to the skillet and cook the chicken breasts for 5-6 minutes per side until golden brown. Remove from the pan and set aside.
- Make the Sauce – In the same pan, add garlic and sun-dried tomatoes. Cook for 1 minute. Pour in heavy cream, chicken broth, and Parmesan cheese, stirring until smooth.
- Combine Everything – Add spinach and cooked bacon, stirring until spinach wilts. Return the chicken to the pan and simmer for 5 minutes, spooning sauce over the top.
- Serve – Garnish with fresh basil or parsley and serve hot with pasta, rice, or crusty bread.
Notes
- Use chicken thighs instead of breasts for extra juiciness.
- For a lighter version, use half-and-half instead of heavy cream.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat gently on the stovetop with a splash of chicken broth to keep the sauce creamy.
