  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 cup fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon red pepper flakes (optional)
  • Fresh basil or parsley for garnish

Instructions

  • Prepare the Chicken – Pat chicken breasts dry with paper towels and season with salt, pepper, and Italian seasoning.
  • Cook the Bacon – In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving about 1 tablespoon of bacon fat in the pan.
  • Sear the Chicken – Add olive oil to the skillet and cook the chicken breasts for 5-6 minutes per side until golden brown. Remove from the pan and set aside.
  • Make the Sauce – In the same pan, add garlic and sun-dried tomatoes. Cook for 1 minute. Pour in heavy cream, chicken broth, and Parmesan cheese, stirring until smooth.
  • Combine Everything – Add spinach and cooked bacon, stirring until spinach wilts. Return the chicken to the pan and simmer for 5 minutes, spooning sauce over the top.
  • Serve – Garnish with fresh basil or parsley and serve hot with pasta, rice, or crusty bread.
