For the Churro Dough:

- 2 large eggs

- ½ cup granulated sugar
- 1 tbsp ground cinnamon

Prepare the Dough:
- In a saucepan, combine water, butter, sugar, and salt. Bring to a boil.
- Reduce heat and stir in the flour until a dough forms. Remove from heat and let cool slightly.
- Beat in eggs, one at a time, followed by vanilla extract, until smooth.

Pipe the Churros:
- Transfer dough to a piping bag fitted with a large star tip.
- Pipe 4-inch churros onto parchment paper.

Fry the Churros:
- Heat oil to 375°F (190°C) in a deep fryer or heavy pot.
- Fry churros in batches for 2-3 minutes per side until golden brown.
- Drain on a paper towel-lined plate.

Coat the Churros:
- Mix cinnamon and sugar in a shallow dish.
- Roll warm churros in the mixture to coat evenly.

Fill with Nutella:
- Warm Nutella slightly for easy piping.
- Use a piping bag with a narrow tip to fill churros from both ends.

- Serve warm with extra Nutella or chocolate sauce for dipping.

- Avoid overfilling churros to prevent leaks.
