  • Total Time: 1 hour 15 minutes
  • Yield: 46 servings 1x

Ingredients

Scale

For the Meatloaf:

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup bread crumbs
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard
  • Salt and pepper to taste

For the Mashed Potatoes:

  • 2 pounds Yukon Gold potatoes, peeled and diced
  • 1/2 cup milk or cream
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  • Prep the Meatloaf:
Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the ground beef, ground pork, bread crumbs, eggs, onion, garlic, salt, and pepper. Mix until evenly combined. Shape the mixture into a loaf and place it on a lined baking sheet.
  • Add the Glaze:
In a small bowl, mix ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf.
  • Bake the Meatloaf:
Bake the meatloaf in the oven for about 1 hour, or until the internal temperature reaches 160°F (71°C). Once done, let it rest for 10 minutes before slicing.
  • Cook the Potatoes:
While the meatloaf bakes, bring a large pot of salted water to a boil. Add the diced potatoes and cook for 15–20 minutes, or until fork-tender.
  • Mash the Potatoes:
Drain the potatoes and return them to the pot. Add butter, warm milk, salt, and pepper. Mash until smooth and creamy.
  • Serve:
Slice the meatloaf and serve it alongside a generous portion of mashed potatoes. Add a drizzle of gravy or ketchup glaze for extra flavor. Enjoy!

Notes

  • For a lighter option, use ground turkey or chicken instead of beef and pork.
  • Add shredded cheese, diced bell peppers, or Worcestershire sauce to the meatloaf mixture for extra flavor.
  • Make the mashed potatoes dairy-free by substituting butter with olive oil and milk with almond milk or vegetable broth.
