For the Meatloaf:
- 1 pound ground beef
- 1/2 pound ground pork
- 1 cup bread crumbs
- 2 large eggs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup ketchup

- 1 teaspoon mustard
- Salt and pepper to taste
For the Mashed Potatoes:
- 2 pounds Yukon Gold potatoes, peeled and diced
- 1/2 cup milk or cream
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Prep the Meatloaf:
Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the ground beef, ground pork, bread crumbs, eggs, onion, garlic, salt, and pepper. Mix until evenly combined. Shape the mixture into a loaf and place it on a lined baking sheet. - Add the Glaze:
In a small bowl, mix ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf. - Bake the Meatloaf:
Bake the meatloaf in the oven for about 1 hour, or until the internal temperature reaches 160°F (71°C). Once done, let it rest for 10 minutes before slicing. - Cook the Potatoes:
While the meatloaf bakes, bring a large pot of salted water to a boil. Add the diced potatoes and cook for 15–20 minutes, or until fork-tender. - Mash the Potatoes:
Drain the potatoes and return them to the pot. Add butter, warm milk, salt, and pepper. Mash until smooth and creamy. - Serve:
Slice the meatloaf and serve it alongside a generous portion of mashed potatoes. Add a drizzle of gravy or ketchup glaze for extra flavor. Enjoy!
Notes
- For a lighter option, use ground turkey or chicken instead of beef and pork.
- Add shredded cheese, diced bell peppers, or Worcestershire sauce to the meatloaf mixture for extra flavor.
- Make the mashed potatoes dairy-free by substituting butter with olive oil and milk with almond milk or vegetable broth.
