- 4 bone-in pork chops (1 inch thick)
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 2 garlic cloves, minced
- 1 tsp rosemary, chopped
- 1 tsp thyme, chopped

- 4–5 medium apples (Honeycrisp or Granny Smith)
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 1 tbsp lemon juice
Instructions
- For the Pork Chops:
- Preheat your grill to 400-450°F.
- In a bowl, combine olive oil, apple cider vinegar, garlic, rosemary, thyme, salt, and pepper.
- Rub the marinade over the pork chops and let them sit for 15-30 minutes.
- Grill the pork chops for 2-3 minutes per side over high heat to sear.
- Move to a cooler part of the grill to cook through, about 5-7 more minutes, until the internal temperature reaches 145°F.
- Let rest for 5 minutes before serving.
- For the Apple Sauce:
- Peel, core, and chop the apples into small chunks.
- In a saucepan, combine apples, brown sugar, cinnamon, and lemon juice.
- Add 1/2 cup of water and cook over medium heat for 15-20 minutes, stirring occasionally.
- Mash the apples with a fork or use a blender for smoother consistency.
- Serve:
- Spoon the apple sauce over the grilled pork chops and enjoy!

- For extra flavor, you can marinate the pork chops for up to 2 hours.
- If you prefer a smoother apple sauce, blend it until smooth.
- Serve with your favorite sides like roasted vegetables or mashed potatoes.
