For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
For the Mango Salsa:
- 2 ripe mangoes, diced
- 1 small red onion, finely chopped
- 1 jalapeño, minced (optional)
- 2 tbsp fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Marinate the Chicken:
- In a small bowl, whisk together olive oil, lime juice, garlic, chili powder, cumin, salt, and pepper.
- Pour the marinade over the chicken in a resealable bag or container. Marinate in the fridge for 30 minutes to 8 hours.
- Prepare the Mango Salsa:
- In a bowl, combine diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Toss gently to mix. Cover and refrigerate until ready to serve.
- Grill the Chicken:
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade and pat dry.
- Grill chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Assemble and Serve:
- Let the chicken rest for 3-5 minutes after grilling.
- Top each chicken breast with a generous scoop of mango salsa. Serve immediately.
Notes
- Substitute mangoes with peaches or pineapple if mangoes are unavailable.
- Add a pinch of sugar to the salsa if the mangoes aren’t sweet enough.
- Store leftovers in the fridge: chicken for up to 3 days, salsa for 1-2 days.
