  • 2 ripe mangoes, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, minced (optional)
  • 2 tbsp fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Marinate the Chicken:
    • In a small bowl, whisk together olive oil, lime juice, garlic, chili powder, cumin, salt, and pepper.
    • Pour the marinade over the chicken in a resealable bag or container. Marinate in the fridge for 30 minutes to 8 hours.
  2. Prepare the Mango Salsa:
    • In a bowl, combine diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Toss gently to mix. Cover and refrigerate until ready to serve.
  3. Grill the Chicken:
    • Preheat the grill to medium-high heat.
    • Remove chicken from the marinade and pat dry.
    • Grill chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  4. Assemble and Serve:
    • Let the chicken rest for 3-5 minutes after grilling.
    • Top each chicken breast with a generous scoop of mango salsa. Serve immediately.

Notes

  • Substitute mangoes with peaches or pineapple if mangoes are unavailable.
  • Add a pinch of sugar to the salsa if the mangoes aren’t sweet enough.
