Instructions

  1. Prepare the Cinnamon Swirl:

    • In a small bowl, mix softened butter, brown sugar, and cinnamon until smooth.
    • Transfer the mixture to a piping bag or squeeze bottle and set aside.
  2. Make the Pancake Batter:

    • In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
    • In another bowl, whisk together milk, eggs, melted butter, and vanilla extract.
    • Slowly add the wet ingredients to the dry ingredients, mixing until just combined (do not overmix).
  3. Cook the Pancakes:

    • Heat a non-stick skillet or griddle over medium-low heat.
    • Lightly grease with butter or cooking spray.
    • Pour about ¼ cup of batter onto the skillet.
    • Quickly pipe the cinnamon swirl onto the pancake batter in a spiral motion.
  4. Flip and Finish Cooking:

    • Cook until bubbles form on the surface and the edges look set, about 2 minutes.
    • Carefully flip and cook for another 1-2 minutes until golden brown.
  5. Prepare the Cream Cheese Drizzle:

    • In a bowl, whisk together softened cream cheese, powdered sugar, vanilla extract, and milk until smooth.
