  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 salmon fillets (68 oz each)
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup panko breadcrumbs
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil or melted butter
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon zest

For the Lemon Butter Drizzle:

  • 3 tbsp unsalted butter
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped

Instructions

  • Preheat & Prep: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Make the Parmesan Crust: In a bowl, mix Parmesan, panko, garlic powder, paprika, salt, and pepper.
  • Coat the Salmon: Pat salmon fillets dry, brush with olive oil or melted butter, then press the Parmesan mixture onto the tops.
  • Bake: Place salmon on the baking sheet and bake for 12-15 minutes, until golden and crispy.
  • Prepare the Lemon Butter: While salmon bakes, melt butter in a small saucepan over low heat. Add garlic, cook for 1 minute, then stir in lemon juice and parsley.
  • Serve: Drizzle the lemon butter sauce over the crispy Parmesan salmon. Garnish with extra parsley and serve hot!

Notes

  • Use wild-caught salmon for the best flavor and texture.
  • For extra crispiness, broil the salmon for the last 1-2 minutes.
  • Can be made gluten-free by using almond meal instead of breadcrumbs.
  • Pair with roasted veggies, mashed potatoes, or a fresh salad.
