Ingredients
Scale
- 4 large flour tortillas
- 6 eggs, whisked
- 4 slices of bacon (or 1 cup cooked sausage)
- 1 cup hash browns, cooked
- 1 cup shredded cheese (cheddar or Mexican blend)
- ½ cup salsa
- ¼ cup diced onions (optional)
- Salt and pepper to taste
- 1 tbsp butter or oil for cooking
Optional toppings: sour cream, guacamole, or hot sauce.
Instructions
- Cook the Protein: In a skillet, cook bacon until crispy or brown sausage until fully cooked. Set aside.
- Prepare Hash Browns: Cook the hash browns until golden and crispy. Remove and set aside.
- Scramble the Eggs: Whisk eggs with salt and pepper. Heat butter or oil in a pan and scramble the eggs until fluffy.
- Warm the Tortillas: Heat tortillas in a dry skillet or microwave to make them pliable.
- Assemble the Burritos: Lay each tortilla flat. Layer eggs, hash browns, bacon/sausage, cheese, and salsa in the center.
- Wrap the Burrito: Fold in the sides, then roll tightly from the bottom up to enclose the filling.
- Toast the Burrito (Optional): Heat the assembled burritos in a skillet for a crispy, golden finish.
Notes
- For a vegetarian option, substitute bacon or sausage with black beans or sautéed veggies.
- To make ahead, wrap the burritos tightly in foil and store in the refrigerator or freezer. Reheat as needed.
- Customize the spice level by adding jalapeños, hot sauce, or pepper jack cheese.
