For the Dough:

  • 4 cups (500g) all-purpose flour
  • 1/3 cup (67g) granulated sugar
  • 2 1/4 tsp (1 packet) active dry yeast
  • 1 cup (240ml) warm milk (about 110°F/45°C)
  • 1/3 cup (75g) unsalted butter, melted
  • 1 large egg
  • 1/2 tsp salt

For the Filling:

  • 3/4 cup (150g) brown sugar
  • 2 tbsp ground cinnamon
  • 1/4 cup (57g) unsalted butter, softened

For the Frosting:

  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (57g) unsalted butter, softened
  • 1 cup (125g) powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Prepare the Dough:
    • In a large bowl, combine warm milk, sugar, and yeast. Let it sit for 5–10 minutes until frothy.
    • Add melted butter, egg, and salt, mixing to combine. Gradually add flour, kneading until a soft dough forms.
    • Knead on a floured surface for 8–10 minutes or use a stand mixer with a dough hook for 5–7 minutes.
    • Place the dough in a greased bowl, cover, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.
  • Prepare the Filling:
    • Mix brown sugar and cinnamon in a small bowl.
  • Assemble the Rolls:
    • Roll out the dough into a 16×12-inch rectangle on a lightly floured surface.
    • Spread softened butter over the dough, then sprinkle evenly with the cinnamon-sugar mixture.
    • Starting from the long edge, tightly roll the dough into a log. Cut into 12 even slices.
  • Proof the Rolls:
    • Place the slices in a greased 9×13-inch baking dish, leaving space between rolls. Cover and let rise for 30–45 minutes until puffy.
  • Bake the Rolls:
    • Preheat oven to 350°F (175°C). Bake for 20–25 minutes or until golden brown.
  • Make the Frosting:
    • Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, mixing until creamy.
  • Frost the Rolls:
    • Spread frosting over the warm cinnamon rolls. Serve immediately and enjoy!

Notes

  • For overnight cinnamon rolls, assemble the rolls and refrigerate before the second rise. Allow them to come to room temperature for 30 minutes before baking.
  • To freeze, bake the rolls without frosting and store in an airtight container. Thaw and reheat before adding frosting.
  • For a lighter option, skip the frosting and drizzle with a simple powdered sugar glaze.
