Instructions

  • Prepare the chicken: Start by trimming any excess fat from the chicken breasts. Place the chicken between plastic wrap or parchment paper and pound each breast to 1/4-inch thickness. Season both sides with salt, pepper, and garlic powder.
  • Dredge the chicken: Lightly coat the chicken cutlets in flour, shaking off any excess.
  • Cook the chicken: Heat olive oil in a heavy-bottomed skillet over medium-high heat. Add the chicken and cook for 3-4 minutes on each side until golden brown. Remove chicken from the pan and set aside.
  • Make the sauce: In the same pan, add butter and melt it. Once melted, deglaze the pan with white wine, scraping up any browned bits from the bottom. Stir in fresh lemon juice and capers. Let the sauce simmer for about 2 minutes to reduce slightly.
