- 2 cups cooked chicken (shredded or diced)
- 1 ½ cups long-grain white rice
- 1 can cream of chicken soup (or homemade white sauce)
- 1 cup shredded cheddar cheese
- 1 cup frozen mixed vegetables
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper to taste
- 2 cups chicken broth
- 1 tablespoon olive oil (for greasing dish)
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch casserole dish with olive oil.
- In a large mixing bowl, combine the chicken, cooked rice, cream of chicken soup, shredded cheese, mixed vegetables, garlic powder, onion powder, salt, pepper, and chicken broth. Stir until well combined.
- Transfer the mixture to the greased casserole dish and spread it evenly.
- Cover with aluminum foil and bake for 35-45 minutes, until bubbly and the top is golden brown.
- Let the casserole rest for 10 minutes before serving. Enjoy!
Notes
- You can use any type of protein, such as rotisserie chicken or even ground turkey.
- For a healthier twist, use brown rice or cauliflower rice.
