Instructions
- Cook the Bacon: In a skillet, cook bacon until crispy, then drain on paper towels and crumble.
- Scramble the Eggs: In a bowl, whisk eggs with salt and pepper. Cook in the same skillet over medium heat until soft and fluffy. Set aside.
- Assemble the Quesadilla: Place one tortilla on a clean surface. Sprinkle half the cheese on one side, then add scrambled eggs, crumbled bacon, and the rest of the cheese. Fold in half.
- Cook the Quesadilla: Heat butter or oil in a skillet over medium heat. Cook the quesadilla for 2-3 minutes per side, until golden brown and crispy.
- Serve & Enjoy: Slice and serve immediately with salsa, sour cream, or avocado.
