  • 2 anchovy fillets (or 1 teaspoon anchovy paste)
  • 1 garlic clove, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/3 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  • Prepare the Chicken:
    • Mix olive oil, lemon juice, garlic powder, salt, and pepper in a bowl. Add the chicken breasts and marinate for at least 30 minutes.
    • Preheat your grill or grill pan to medium heat. Grill the chicken for 6–8 minutes on each side or until the internal temperature reaches 165°F. Set aside and let rest before slicing.
  • Prepare the Dressing:
    • Mash the anchovies and garlic into a paste using a mortar and pestle.
    • Whisk in Dijon mustard, lemon juice, and olive oil.
    • Stir in Parmesan cheese and season with salt and pepper.
  • Assemble the Salad:
    • Place the chopped romaine lettuce in a large bowl.
    • Add croutons and grated Parmesan cheese.
    • Top with grilled chicken slices.
  • Add the Dressing:
    • Drizzle the Caesar dressing over the salad. Toss gently to combine.
  • Serve:
    • Garnish with additional Parmesan cheese and freshly ground black pepper. Serve immediately.

  • For a vegetarian version, replace chicken with roasted chickpeas or grilled tofu.
