For the Salad:
- 2 large chicken breasts
- 1 head of romaine lettuce, washed and chopped
- 1 cup croutons
- 1/3 cup grated Parmesan cheese
For the Marinade:
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Caesar Dressing (Homemade):
- 2 anchovy fillets (or 1 teaspoon anchovy paste)
- 1 garlic clove, minced
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1/3 cup olive oil
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Prepare the Chicken:
- Mix olive oil, lemon juice, garlic powder, salt, and pepper in a bowl. Add the chicken breasts and marinate for at least 30 minutes.
- Preheat your grill or grill pan to medium heat. Grill the chicken for 6–8 minutes on each side or until the internal temperature reaches 165°F. Set aside and let rest before slicing.
- Prepare the Dressing:
- Mash the anchovies and garlic into a paste using a mortar and pestle.
- Whisk in Dijon mustard, lemon juice, and olive oil.
- Stir in Parmesan cheese and season with salt and pepper.
- Assemble the Salad:
- Place the chopped romaine lettuce in a large bowl.
- Add croutons and grated Parmesan cheese.
- Top with grilled chicken slices.
- Add the Dressing:
- Drizzle the Caesar dressing over the salad. Toss gently to combine.
- Serve:
- Garnish with additional Parmesan cheese and freshly ground black pepper. Serve immediately.
Notes
- For a vegetarian version, replace chicken with roasted chickpeas or grilled tofu.
- Use gluten-free croutons if needed.
- Store leftover dressing in an airtight container in the refrigerator for up to 3 days.
