  • Total Time: 15 minutes
  • Yield: 2 servings 1x

Ingredients

Scale
  • 2 large flour tortillas (or your preferred type)
  • 4 oz cooked sausage, crumbled or sliced
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite blend)
  • 1 tbsp butter or oil for cooking
  • Optional: diced vegetables (bell peppers, spinach, onions)
  • Optional toppings: sour cream, salsa, or guacamole

Instructions

  • Prepare the Sausage:
    • Cook the sausage in a skillet over medium heat until browned and fully cooked. Remove from the pan and drain excess grease. Set aside.
  • Prep the Tortillas:
    • Spread a thin layer of butter or oil on one side of each tortilla for a crispy exterior.
  • Assemble the Quesadilla:
    • Place one tortilla buttered side down in a heated skillet over medium heat. Sprinkle half the shredded cheese evenly on one side.
    • Add the cooked sausage on top of the cheese, spreading it evenly. Optionally, add diced vegetables for extra flavor and texture.
    • Sprinkle the remaining cheese over the sausage, then place the second tortilla on top, buttered side facing up.
  • Cook the Quesadilla:
    • Cook for about 2–3 minutes, or until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla using a wide spatula. Cook for another 2–3 minutes until the second side is golden and the cheese is melted.
  • Slice and Serve:
    • Remove the quesadilla from the skillet and let it cool slightly. Slice into wedges and serve with your favorite toppings like sour cream, salsa, or guacamole.

Notes

  • For a healthier option, use turkey sausage and whole wheat tortillas.
  • Want extra protein? Add scrambled eggs to the filling.
  • Experiment with different cheeses and mix-ins to create your unique flavor combination.
