Instructions

Step 1: Prepare the Filling

  1. Heat a skillet over medium heat. Cook the ground beef until browned and crumbled. Drain excess grease.
  2. Stir in garlic powder, onion powder, salt, and pepper. Mix well.
  3. Add BBQ sauce and cooked bacon to the skillet. Stir until combined and set aside.
  4. Once cooled slightly, fold in shredded cheddar cheese.

Step 2: Prepare the Bell Peppers

  1. Preheat your oven to 375°F (190°C).
  2. Wash and dry the bell peppers. Slice off the tops and remove seeds and membranes. Trim the bottoms if needed to make them stand upright.
  3. Lightly coat the exterior of the peppers with olive oil.

Step 3: Assemble and Bake

  1. Fill each pepper with the prepared beef mixture, pressing down to pack it in evenly.
  2. Place the stuffed peppers upright in a baking dish. Cover with aluminum foil to prevent over-browning.
  3. Bake for 25–30 minutes. Remove the foil and bake for another 10 minutes to melt the cheese and lightly brown the tops.
