For the Filling:
- 1 pound ground beef
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- ½ cup BBQ sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
For the Peppers:
- 4 large bell peppers (any color)
- 1 tablespoon olive oil

- Sour cream
- Chopped parsley or green onions
- Additional crumbled bacon
Instructions
Step 1: Prepare the Filling
- Heat a skillet over medium heat. Cook the ground beef until browned and crumbled. Drain excess grease.
- Stir in garlic powder, onion powder, salt, and pepper. Mix well.
- Add BBQ sauce and cooked bacon to the skillet. Stir until combined and set aside.
- Once cooled slightly, fold in shredded cheddar cheese.
Step 2: Prepare the Bell Peppers
- Preheat your oven to 375°F (190°C).
- Wash and dry the bell peppers. Slice off the tops and remove seeds and membranes. Trim the bottoms if needed to make them stand upright.
- Lightly coat the exterior of the peppers with olive oil.
Step 3: Assemble and Bake
- Fill each pepper with the prepared beef mixture, pressing down to pack it in evenly.
- Place the stuffed peppers upright in a baking dish. Cover with aluminum foil to prevent over-browning.
- Bake for 25–30 minutes. Remove the foil and bake for another 10 minutes to melt the cheese and lightly brown the tops.
Step 4: Serve
- Let the peppers cool for 5 minutes before serving. Garnish with optional toppings like sour cream, parsley, or crumbled bacon.
Notes
- For extra smoky flavor, use smoked cheddar cheese or a smoked BBQ sauce.
- To make ahead, prepare the filling and stuff the peppers in advance. Cover and refrigerate until ready to bake.
- Pre-baking the peppers for 5 minutes ensures they remain tender but firm.
