Instructions
Step 1: Prepare the Avocado Mixture
- Slice the avocado in half, remove the pit, and scoop out the flesh into a bowl.
- Mash the avocado lightly with a fork, keeping some chunks for texture.
- Add lemon juice, salt, and pepper. Mix well and set aside.
Step 2: Poach the Eggs
- Bring a medium pot of water to a gentle simmer (do not boil).
- Add a splash of vinegar to help the egg whites set properly.
- Crack each egg into a small bowl.
- Stir the simmering water to create a gentle whirlpool and slide one egg into the center.
