For the Chicken Bites:

For the Honey Mustard Sauce:
- ¼ cup Dijon mustard
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- ½ teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Prepare the Chicken: Pat the chicken dry with paper towels and cut it into even 1-inch cubes.
- Make the Coating: In one bowl, mix panko breadcrumbs with garlic powder, paprika, salt, and pepper. In another bowl, place the flour. In a third bowl, beat the eggs.
- Coat the Chicken: Dredge each piece of chicken in flour, dip into the beaten eggs, then coat in the seasoned panko mixture. Press gently to adhere the coating.
- Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and let it preheat for 3 minutes.
- Arrange the Chicken: Place the coated chicken bites in a single layer in the air fryer basket. Do not overcrowd.
- Cook: Air fry for 10-12 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C).
- Make the Honey Mustard Sauce: While the chicken is cooking, whisk together Dijon mustard, honey, apple cider vinegar, garlic powder, salt, and pepper in a small bowl.
- Serve: Drizzle the sauce over the crispy chicken bites or serve it on the side for dipping. Enjoy!
Notes
- For extra crispiness, lightly spray the coated chicken with cooking spray before air frying.
- You can swap panko breadcrumbs for crushed cornflakes for a different texture.
- To make it gluten-free, use gluten-free flour and breadcrumbs.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 3-4 minutes.
