  • 2 boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

  • ½ teaspoon black pepper
  • 2 eggs (beaten)

For the Honey Mustard Sauce:

  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • Prepare the Chicken: Pat the chicken dry with paper towels and cut it into even 1-inch cubes.
  • Make the Coating: In one bowl, mix panko breadcrumbs with garlic powder, paprika, salt, and pepper. In another bowl, place the flour. In a third bowl, beat the eggs.
  • Coat the Chicken: Dredge each piece of chicken in flour, dip into the beaten eggs, then coat in the seasoned panko mixture. Press gently to adhere the coating.
  • Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and let it preheat for 3 minutes.
  • Arrange the Chicken: Place the coated chicken bites in a single layer in the air fryer basket. Do not overcrowd.
  • Cook: Air fry for 10-12 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C).
  • Make the Honey Mustard Sauce: While the chicken is cooking, whisk together Dijon mustard, honey, apple cider vinegar, garlic powder, salt, and pepper in a small bowl.
