Ingredients
✅ For the Meatloaf:
- 2 lbs ground beef
- 1 cup breadcrumbs
- 1 egg
- 1/2 cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
✅ For the Filling:
- 8 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 2 jalapeños, diced
✅ For the Topping:
- 1 cup shredded cheddar cheese
- 1 jalapeño, sliced
Instructions
1️⃣ Preheat oven to 375°F (190°C). Line a baking pan with parchment paper.
2️⃣ In a bowl, mix ground beef, breadcrumbs, egg, milk, and seasonings until well combined.
3️⃣ In a separate bowl, mix cream cheese, cheddar, bacon, and diced jalapeños for the filling.
4️⃣ Press half of the meatloaf mixture into the pan. Spread the cream cheese filling evenly.
5️⃣ Top with the remaining meatloaf mixture, sealing the edges.
6️⃣ Bake for 45-50 minutes until cooked through.
7️⃣ Sprinkle shredded cheddar on top and bake for 5 more minutes until melted.
8️⃣ Garnish with sliced jalapeños, serve, and enjoy!
Notes
- Milder Version: Remove jalapeño seeds or substitute with bell peppers.
- Extra Crunch: Add crushed tortilla chips to the topping.
